Start by baking your zucchini meatballs (from a previous recipe) for half the usual time. Once removed from the oven, transfer the partially baked meatballs to a skillet. Add 1 can of beef broth to the skillet with the meatballs and simmer until they are fully cooked through. Stir in half a block of low-fat cream cheese to create a creamy gravy. Serve the Swedish meatballs and gravy over cooked brown rice or Banza noodles.
