A healthified version of the popular Girl Scout Caramel Delites (Samoas) cookies, requiring only 4 ingredients and no baking (except for toasting coconut). These fool-proof cookies curb your sweet tooth while providing fiber and healthy fats.

Toast unsweetened coconut flakes at 300°F until golden brown. Pulse pitted dates in a food processor until smooth (add 1-2 tablespoons of water if needed to achieve smoothness). Stir the toasted coconut flakes into the date mixture until evenly incorporated. Form the mixture into the shape of rings and place them in the freezer until firm. Melt the dark chocolate chips and coconut oil together in the microwave, then stir until smooth. Drizzle the melted chocolate mixture over each cookie. For a more traditional look, you can melt more chocolate to cover the bottoms of the cookies. Store the cookies in the fridge to keep them firm and chewy for up to a week.
