An easy-to-follow recipe for delicious pumpkin sourdough bread, perfect for fall baking and holiday entertaining.

Mix all ingredients together until evenly incorporated. Cover with a towel and let sit for an hour on the counter, performing a couple rounds of stretch and folds in between. Knead the dough on a floured surface until smooth. Shape the dough and place it in a basket. Let it rise for a couple hours on the counter (no more than 8), then place it in the fridge overnight. When ready to bake, tie up as seen in the video (if applicable) and bake at 450°F (232°C) for 40-50 minutes, uncovering the last 10 minutes if you want the outside to be crispy. Enjoy!
