Spanakopita is a savory spinach pie that is common in Greek cuisine and so so delish! They filling packs a nutrient punch and the flavor is so delish.

Sauté onion and garlic until softened, then stir in your spinach to wilt. In a separate bowl combine your egg and cheese before mixing into cooled spinach mixture. Layer 5 sheets of phyllo dough in an 8x8 baking dish, spraying with the oil in between. Pour in your filling the add the remaining sheets, lightly coating with the oil between each. Bake at 350° for 30-35 minutes or until top is golden and flaky. Enjoy!
