This Holy Cheesus Spinach Artichoke Dip is an "out of this world" recipe, perfect for using up spinach. It's a satisfying, better-for-you treat, high in fiber and slow-digesting protein from cheese, keeping you full for hours. Great for parties, trivia nights, or tailgates, and quick to make!

Place spinach and artichokes in a lightly sprayed saucepan over medium high heat. Add chicken stock if using frozen artichoke hearts and sauté until spinach is wilted and artichokes are thawed and soft. Stir in both cheeses (cream cheese and Parmesan) and cook on medium until melted and evenly incorporated. Add more chicken stock if desired to thin out the sauce or serve as-is! Continue simmering if sauce becomes TOO thin until it has thickened to your desired texture. If you want that added cheese layer on top, simply sprinkle on about 1/4 cup of part-skim mozzarella cheese and place in the oven on a low broil for ~5 minutes (watch carefully to avoid burning). Serve with your choice of veggies and enjoy!
