With epic levels of creaminess and flavor, you’d never guess this glorious bowl has half the calories of traditional mac and triple the protein. Because of how simple it is to make (four ingredients, plus seasoning), this mac ‘n’ cheese is one of the most frequently made recipes to date. The sauce only takes about 5 minutes!

Blend cottage cheese with milk and seasoning (salt, garlic, paprika) in a food processor or blender until smooth, ensuring no small chunks remain. Pour the mixture into a saucepan and heat on low. Whisk in the shredded cheddar cheese until fully melted. To achieve a thicker sauce, turn up the heat and simmer (remember it will continue to thicken once noodles are added). Stir in the cooked pasta until evenly incorporated. Serve immediately and enjoy! Optional variations include using nutritional yeast instead of cheddar for a lower dairy option, adding sautéed jalapeños for heat, or spinach for extra micronutrients.
