Thinly slice zucchinis and sauté in lemon juice over medium high heat until softened. Transfer to 9x13 baking dish and stir in the sugar and cinnamon. Mix together crumble topping (brown sugar, cane sugar, softened butter, old-fashioned oats, all-purpose flour, and cinnamon) and sprinkle evenly over the top before baking at 350° for about 45 minutes. The top will be golden brown and bubbly - feel free to add time for a crispier topping! Serve plain, with vanilla yogurt or a scoop of ice cream and enjoy!
