Thinly slice 1 sweet potato (horizontal or length-wise) and place in an air fryer basket, making sure the pieces don’t overlap. Lightly coat with olive oil spray and sprinkle with salt and pepper. “Fry” at 400°F for 10-12 minutes or until the desired level of crispiness is achieved. (If making in the oven, bake at 400°F for 15 minutes, then flip and continue cooking for another 5-10 minutes until crispy on the edges). For the topping: stir together a few ounces of goat cheese with 1 tablespoon honey or maple syrup.
