Whisk ingredients in a small bowl until no lumps remain (batter should be thin). Heat a small non-stick skillet over medium and spritz with cooking spray. Pour a very THIN layer of batter into the pan so it just covers the bottom (adding too much batter here will make the crepes harder/dry).
