What you need

cup coconut sugar

tsp baking soda
egg

cup quick oats

cup creamy peanut butter

cup semisweet chocolate chips
Instructions
Stir together peanut butter and sugar until thoroughly combined, then add in the egg. Lastly, stir in the oats and baking soda and then finally the mix-ins. Scoop onto a parchment-lined baking sheet and bake at 350° for 8 minutes or until they appear set in the middle (undercook slightly if you want that extra fudgy-ness 😛).
