Cauliflower Stuffing

This paleo-friendly, gluten-free cauliflower stuffing is a delicious and healthy take on the classic Thanksgiving side dish. It offers all the hearty flavor without processed carbs or questionable texture, and it's even great as leftovers without becoming soggy or dried out.

What you need

tsp dried thyme

head cauliflower

cup chicken broth

cup carrot

cup onion

cup celery

tsp dried rosemary
Instructions
Preheat oven to 375° and chop cauliflower into small pieces. Spread on a lightly greased baking sheet and roast until golden brown and slightly charred. Meanwhile, sauté the rest of the chopped veggies in a large, nonstick pan over medium-high heat until al dente. Pour in 1 cup of chicken broth, add the seasonings, and simmer. Stir in the roasted cauliflower and continue cooking until all veggies are tender/reach desired consistency (feel free to add more chicken broth if needed to get veggies softer/more flavorful).
