What you need

cup dried cherries

pork loin

Preheat oven to 375°F (190°C). Place pork loin between two pieces of parchment paper and pound until about 1/2 inch thick. Sprinkle garlic salt and chopped rosemary, then dried cherries and crumbled goat cheese evenly over the meat. Roll the pork loin up tightly lengthwise and season the outside with more garlic salt before placing rosemary sprigs on top. Tie securely with kitchen twine then bake for 35–45 minutes, or until internal temperature reaches 145°F.
