Instructions
Preheat your oven to 400°F (200°C). On a large baking sheet, toss the tomatoes, chopped yellow bell peppers, chopped white onions, and garlic heads (with tops removed and covered in oil) with olive oil, salt, and pepper. Roast all ingredients in the oven at 400°F until they are soft and browned. Once roasted, transfer everything from the baking sheet into a blender, discarding the garlic skins. Blend on high until the soup is smooth. Taste the soup and add more salt and pepper if desired.
