Easy Date-Night Scallops with Creamed Spinach

This combo of scallops and creamed spinach is always a hit for a date night, feeling fancy but whipping up in a breeze. Scallops are pan-seared in less than 5 minutes, and their mildly sweet/salty flavor tastes rich and decadent. The creamy spinach complements the dish perfectly.

What you need

pinch salt

tbsp butter

clove garlic clove

spinach

pinch pepper
oz sea scallops

cup parmesan cheese
Instructions
Directions for Scallops: Heat 2 tablespoons of butter or oil in a large frying pan over medium high heat. Lightly season scallops with salt and pepper if desired, and place in pan. Cook for only about 1-2 minutes each side, making sure the butter/oil is hot BEFORE placing scallops in so you get a nice sear. The scallops will become opaque when done. Creamed Spinach: Thaw frozen spinach and squeeze out ALL the liquid until hardly any moisture remains. Lightly spray a non-stick skillet and sauté the minced garlic until fragrant. Add in spinach and cream cheese and cook until cheese is thoroughly melted, stirring continuously. Add additional grated Parmesan to taste, or leave as is. Serve and enjoy! (Tip: there will be extra creamed spinach that heats up well for leftovers, but only cook the scallops that you’ll eat! As with all seafood, they’re much better fresh.)View original recipe
