What you need

red bell pepper

onion

clove garlic

can diced tomatoes with green chilies

cup raisin

tbsp honey

tbsp capers

tsp red pepper flake

tsp salt

tbsp red wine vinegar
Instructions
1: Toss eggplant in olive oil and salt then roast at 400° for 30 minutes. 2: While eggplant is cooking, sauté onions and peppers over medium high heat until soft. 3: Stir in the garlic and diced tomatoes. 4: Add in the rest of the ingredients along with the roasted eggplant and continue simmering until sauce is thick. 5: Garnish with parsley and enjoy!View original recipe
