Send me to Hogwart’s because this #healthified Caramel Corn is straight-up witchcraft 💫🍿🍯 After totally winging this recipe for Mother’s Day, I teased it in my stories since it got rave reviews. My mom’s my harshest recipe critic (you know how moms keep it real lol), and she has a major sweet tooth, so I can’t slip healthy swaps by her. Therefore, when she couldn’t tell this caramel corn was any different than the un-healthified stuff, I knew this recipe was winner!! 😆🙌🏼 You’ll understand too when you make it yourself, and trust me you do NOT want to forget about this one. 🔥

What you need

cup coconut oil

cup light corn syrup

tsp salt

tsp baking soda

microwave popcorn
Instructions
Make fresh popcorn on the stovetop or microwave a bag according to package directions. Meanwhile, combine remaining ingredients, except for the baking soda, in a large pot over high heat. Bring to a boil, then stir frequently as mixture boils for about 5 minutes. Remove from heat and whisk in baking soda until evenly incorporated. Pour popcorn into the caramel mixture and stir until each piece is coated, then transfer onto wax paper and spread out to prevent large clumps. Let cool (the popcorn gets crispier as it cools, so I promise it's worth the wait 😜) then devour responsibly.View original recipe
