Sweet Potato Crostini Bites

This super simple holiday appetizer is sure to be a hit at any gathering! It’s basically the best parts of a cheeseboard on a little crispy slice of sweet potato. The flavor/texture combo is heavenly. Make sure to save a few extra for yourself because these go fast.

What you need

tsp salt

pepper

oz goat cheese

sweet potato

walnut

fl oz olive oil cooking spray
fl oz raspberry jam
Instructions
Thinly slice your sweet potatoes and place in air fryer basket, making sure the pieces don’t overlap. Lightly coat with olive oil spray and sprinkle with salt/pepper. “Fry” at 400°F for 10-12 minutes or until desired level of crispiness is achieved. (If making in the oven, bake at 400°F for 15 minutes, then flip and continue cooking for another 5-10 minutes until crispy on the edges). Once cooled, add your toppings. I used a super savory bacon jalapeño jam, then added the cheese, walnuts, and pomegranate seeds. Enjoy!View original recipe
