Low-Carb, Super Cheesy Zucchini Ravioli

What you need

can marinara sauce
egg

cup fresh basil leaves

tsp black pepper

cup shredded mozzarella
oz mozzarella

baby zucchini
Instructions
Thinly slice zucchini lengthwise with a veggie peeler or mandolin and press into paper towels to soak up some liquid. Place the rest of the ingredients (except for the sauce) in a bowl and mix until evenly combined. Make an “x” with two pieces of zucchini and scoop in your filling. Fold the edges of the zucchini over to form a square and place in oven-safe pan filled with one jar of pasta sauce. Sprinkle with extra cheese if desired and bake at 400° for 25-30 minutes or until the raviolis are tender and sauce is bubbly. Serve and enjoy!View original recipe
