Lightened Up Spinach Artichoke Dip

This lightened-up spinach artichoke dip is a family favorite, perfect for Mother's Day or as a meal-prepped dish to encourage more veggie intake throughout the week. It's so satisfying, no one will guess it's a better-for-you treat!

What you need

cup part skim mozzarella

bunch fresh spinach

cup artichoke heart quarters

light cream cheese

cup grated parmesan cheese
Instructions
Place spinach and artichokes in a lightly sprayed saucepan over medium-high heat. Add chicken stock if using frozen artichoke hearts and sauté until spinach is wilted and artichokes are thawed and soft. Stir in both cheeses (cream cheese and Parmesan) and cook on medium until melted and evenly incorporated. Add more chicken stock if desired to thin out the sauce or serve as-is. Continue simmering if the sauce becomes too thin until it has thickened to your desired texture. If you want an added cheese layer on top, simply sprinkle on about 1/4 cup of part-skim mozzarella cheese and place in the oven on a low broil for approximately 5 minutes (watch carefully to avoid burning).
