Sweet Medjool dates pitted and filled with creamy pistachio, then coated in melted chocolate and optionally topped with crunchy pistachios and sea salt.

Remove the pit from each date and fill with a small spoonful of pistachio cream (homemade or store-bought). Melt dark or semi-sweet chocolate with a little coconut oil until smooth and glossy.
