What you need

bunch basil

cup vegetable broth

tsp black pepper

can canned diced tomatoes
bunch kale

oz grated parmesan cheese

pasta

bunch vegetable mix

can canned white cannellini beans
Instructions
1. Evenly chop any raw veggies you have on hand (e.g., carrots, zucchini, celery) and place them in a crockpot. 2. Add in 2-3 cans of diced tomatoes and 1 can of drained beans (garbanzo or kidney beans work great). 3. Pour in vegetable broth until the veggies are covered and season generously with herbs (such as oregano, basil, and black pepper). 4. Cook on high until the veggies are tender. At the very end, stir in chopped kale and/or pasta (optional) for additional fiber, texture, and nutrients. 5.
